In our educated group I probably don't have to mention the immune and protective benefits of probiotics, but I think Sauerkraut is a terrific form, as its non-dairy and natural -rare!- not to mention the enzyme (for body reactions) and fibre (digestion) bonus.
You want the $2 Polish brined variety(vinegar kills some of the PBs), bonus if it's low sodium; non-pasterurized is supposed best. It was a chore getting the rats to like it, but thanks to my horse, I'm also sneaky and persistent! Here is Moh voluntarily trying unrinsed kraut after 3 days of "teasing."
