Cucumber-- how often is too often?

Cucumber is the second-favourite food of our three Agents. They generally get 1/3 of a slice at bedtime. In my search for information on the dietary safety of Lima beans, I found out that cucumber should apparently be more of an occasional thing due to nitrates.

How often is too often? How much is too much? What are the hazards of too much cucumber?
 
Honestly... I would keep doing what you are doing with cucumber. There are nitrates in all leafy greens and even grains. I think the doses need to be pretty darn high for it to really affect the rats.
