looking for a good vegan cookbook

I only have one cookbook in English, and I haven't tested it a lot yet, but it seems pretty simple to me.

I like books that are simple and mostly ingredients you can get everywhere..(you're pretty much lucky if you find someting else than a boring salad in restaurants for example).. Also.. have you tried looking at blogs for inspiration? I mainly use vegan food blogs now for inspiration :)
 
Vegan cookbooks are few and far between. I have lots of vegetarian cookbooks and find it fairly simple to substitute the dairy and egg for most of the recipes.

If you're looking for something specific I'd be happy to share some recipe's with you.

i'm looking for a paper cook book because my handwriting is awful and i need to have the recipes with me where i do the cooking
and the computer is not in the kitchen

not to mention, when i go online i get so distracted by ohter things!!!!!!!!! :oops: I can't seem to concentrate on anything any more

i found a slow cooker vegetarian cook book online, second hand pretty cheap so I ordered that

I can write out a few short recipes but more than a few, and i'll never make my way thru it. I wish i had a printer!!

i use very few ingredients and cook very simple stuff with very few spices LOL
i'm a bit of a minimalist when it comes to food I guess

I jsut need to find some new combinations of things i already like, such as rice and potatoes, that does not include meat or meat substitutes

and i'd like a few options for a meatless meatball or burger that also does not use fake meat like TVP etc

I don't like soy, or lentils or chick peas LOL but i do like most beans (not crazy about black beans but if they are in something and are not plain, that'd be ok)

I love soups but i'm tired of tomato based ones and i don't know what else to make
I used to make a creamed potato and squash and carrot soup that was good but I don't know if rice or almond or coconut milk will work ?
and how do you thicken it?

so, i guess mostly i'm looking for:
meatless meatballs and/or burgers
a soup base that is not made with tomatoes
and new ways to have rice and potatoes that does not involve meat

so individual recipes for those would be awesome

i prettty much only like these spices/flavors:
onions and garlic
mexican spices: chili powder, cumin, mexican oregano, etc (but not cilantro)

id love some curry recipes for rice that use more veggies and not a lot of exotic things
oh, did i mention, the foods have to be cheap LOL

yeh not that i'm picky!

I used to eat a lot of sweet and sour type meals, chicken pork etc
and I liked bbq sauce on ribs and chicken and pork

now i still like those flavors but without the meat.......can you still use them?
are there any bbq veggies with a starch?

ok i'm rambling now, i just remembered i haven't eaten yet
think i'm make some oatmeal!
 
I think you can still use your BBQ sauces. My sister's hubby made a bbq lentil casserole.
With beans and lentils, it's all about the spices. You can definitely teach your palate to enjoy the food with the right combo of spices.
I'll get my sister to come and write down which vegan recipe books they have.

I use milk(I just use whatever milk is cheapest :giggle: in food, so I think it will work(never tried coconut milk tho). When I thicken my soups, I either use potatoes(has some effect when blended I think), soy cream(there are other kinds that also work, I just prefer soy) works well too.

I never use any meat substitutes when I cook.. But I do use a lot of spices and such, so I don't know how much help it is..
I've also made a white bean soup with cauliflower, if that is of any interest? really thick, filling and I think it's pretty cheap too :) It takes a bit of time to make tho.. but mostly cooks itself
 
Forks Over Knives The Cookbook is the one my husband really likes so far. Another one that is good is The Happy Herbivore. Both are vegan cookbooks.
 
Helen, the white bean and cauliflower soup sounds like something I'd like! I love cauliflower! and most beans.

Love the title of that recipe book, the Happy Herbivore! lol cute

I'm not liking the reaction I get from so many people when I say I want to try being vegan- it's all negative.
I'm not expecting or wanting anyone else to go vegan, it's just what I want to do.
I want to see how I feel after giving this is a really good try- I suspect I won't miss meat much at all, and frankly, I'm finding that I can eat a lot healthier and cheaper with mostly plant foods instead of meats.

I wish I could find a way to present this to my friends so they were less likely to put down the whole thing, and esp to get them to stop offering things that are not on my diet.

I already cut way back on sweets and fats, so please, don't keep offering me candy and such. I have a terrible sweet tooth, and it's hard for me to say no.
I don't buy the stuff so I don't have the temptation in the house, ya know?

who would have thought that the hardest part about a diet change is dealing with other people's reactions! :gaah: :roll: :giggle:

Trying to let that not affect me but it does kinda irritate me.

anyway! I just went shopping and got lots of beans and I broke down and decided to try two of the meat substitutes just to get me over the hump, so to speak. I've been craving meatballs so I got some fake burger meat to make those with, I'll add some oats and stuff cuz I love oats in my regular meatballs that I used to make with ground meats. I never need eggs when you add oats, they seem to hold the balls together pretty well.

Oh and I got that Earth Balance spread. I think I'll miss real butter the most of all. I have always loved butter.
But hopefully my tastes will adjust!
and I got some unsweetened coconut milk, I can use that in cream soups, I hope. They have sweetened and vanilla flavored, I have the vanilla one before and I like that the best of all the non dairy milks I've tried so far (tried soy milk, rice milk, almond milk- so far the coconut milk is my favorite, Haven't tried hemp milk yet)


A neighbor loaned me one of her regular cookbooks so I can check out the vegetable dishes. Don't know why I never thought to do that before! I've always eaten veggies pretty plain, but with veggies being the main course, I can get creative with those.

this is gonna be fun!
 
I'll try to write it down to you then! I have to translate it first tho.. What kind of measurements do you need? I use grams and decilitres and such, so I probably need to translate that too?

I hear ya about family & friends! I'm still dealing with it.. My closest relatives usually taste most of them now tho!(the soup was a hit with them, and they usually thougt of vegetarians as just salad eaters).. It may take some time, but just hang in there! I'm not vegan, but I make as many dinners vegan as I can. I wish there were more vegans/vegetarians here :(
 
What I did to turn my family(meat is THE best food in the world) from negative to curious/positive, was to let them try the foods I make.. Specially the more exciting ones.. I don't use ANY meat substitutes tho(I don't like meat :giggle: ), so that may make it a bit easier.

the pilaf ones sound and look great (I love rice)
the simply vegetable soup, the tomato soup, the cauliflower soup (I dont' have a whole lot of teeth left so I am very fond of soup lol)
the mushroom garlic pie with polenta, the cottage pie, the pumpkin soup
oh and the butterbean burger too!
there were a few that looked good but it didnt have the english name for them.
I don't like lentils at all so nothing with lentils, but a lot of those look so yummy

Guess I should start with one or two, eh? :lol:

Whichever one is easiest to translate or that you already have translated, ok? I can convert metric to ounces, no problem there.

I hope you understand the recipe.. It may not have all the proper words, since my first language is Norwegian, and it's 12:30 am :giggle:
The ~ is because it would be like 0,43456 otherwise :giggle: Let me know if something is unclear!


White bean soup with cauliflower

Serves 4

Ingredients:


~0,5 cup(1dl) dried white beans
1 Shallot onion
2 cloves of garlic
Oil for frying
~ 6 cups(1,5 litre) water with vegetable stock(powder)
1 cauliflower
salt & pepper
Nutmeg
Lemon

How to:

* soak the beans overnight
finely chop shallots and garlic. Heat a bit of oil in a pan, and fry until soft.

* Add beans and vegetable stock. The water should cover at least a couple of inches over the beans.

* Rins the cauliflower and divide in pieces. When the beans have cooked 30-45 minutes, add the cauliflower.
Add more water if needed. Cook until tender. Pick out a few pieces for decoration.

* strain out the stock, but save it. Add the beans and cauliflower in blender(or similar) and run until smooth.
pour back in the pan, and thin with the stock you saved, until desired consistency. Add salt, pepper, nutmeg and lemon to taste.
Serve hot with the cauliflower you saved.

I don't have recipes for all of them, but I can try to translate most when I have time :wink2: I'm the kind of person that goes to the store and just pics whatever I feel like eating, puts it in a pan and see if it turns out edible :laugh4:
If you add the link to the picture I can see if I find out what it was :giggle: No problem! I love to cook, and gets exited when others want to learn how to make vegetarian food :wink2: I cant think of ONE traditional Norwegian dish that is vegetarian.. Traditional Norwegian foods are like.. Sheep heads, fish heads and things like that :sick2:
 
Many of the recipes will be approximately, since I just use whatever I have and often don't measure at all :roll:


Vegetable soup

Ingredients:
0,5l vegetables(I use frozen mix with potatoes, carrots etc)
1l vegetable stock
1 can butterbeans, thoroughly rinsed(or desired amount cooked dry ones)
1 onion, finely chopped
1-2 cloves garlic, finely chopped
Oil
Spices/ herbs

How to:
Fry onion and garlic in oil on medium heat until soft.

Add stock to the onions.
When boiling, add beans and the rest of the vegetables.
Cook for about 10 minutes, or until everything is tender. Season to taste.
 
Mushroom & garlic pie with polenta
Serves ~3

Ingredients:

Pie dough:

2,5dl fine flour(you can mix some whole grain flour in, but it gets a bit harder to work with)
1 ts salt
50g vegan butter/margarine
0,5 dl vegan cooking cream

Mix flour and salt in a bowl. Crumble the butter in, and mix quickly until a firm dough you can make a ball of.

push the dough evenly into a pie pan(?)..

Vegetables:
10 large mushrooms, sliced
4 fresh garlic cloves, finely chopped
a bit of salt + pepper

Heat oil in a large frying pan. fry mushrooms until golden.
Add garlic in the last minutes. Season with salt and pepper.

Polentamix:
4 dl water
2ts bouillon powder(vegan)
1dl polenta(corn flour)

add water and bouillon powder to a pan, heat until boiling
whisk in the polenta(*!!) and cook for about 3 minutes, whisking frequently until it looks like a porridge.

*!! you have to whisk A LOT until mixed, or you’ll get clumps that are almost impossible to get out again.

Assembly:
Add the mushroom mix to pot with polenta and mix well.
add the filling to the pie shell.
Cook on 200 C in 20-30 minutes. The pie crust should becone golden brown.

Serve with a good salad.

Wow, these recipes look awesome!

I've been vegetarian, almost vegan since August 1st. Two things I've noticed, my IBS is pretty much completely gone and I no longer get daily headaches. :)

that's awesome that you're feeling better, Joanne.
I've got IBS too and meat, fatty foods & all dairy have been bad triggers, I've always known that, so I'm pretty sure I"m gonna feel a lot better on this diet :wink:
 
theres a gazillion recipes online, usually a good vegan blog is good place to start.

as far as actual cookbooks go, i love all of Isa Chandra Moskowitz's cookbooks. she has a handful on baking, and a couple more for pretty general recipes. i own a bunch of her books and love all of them. my absolute favourite peanut butter oatmeal cookie recipe is one of hers! no one ever guesses that its vegan.
